Roasted Curry Cauliflower

Ingredients

1 head of cauliflower, cut into florets
1/2 red onion, cut into large wedges and layers separated
10 cherry tomatoes, halved
3 Tbsp olive oil
3 Tbsp canola oil
2 tsp red wine vinegar
Curry powder
Paprika
Powdered ginger
White pepper
Pico Fruta Penzey's seasoning
Pinch oregano
S&p

Instructions

Whish the seasonings, vinegar, and oils. Toss the veggie in the mix and spread across two cookie sheets covered with parchment paper. Bake at 450 for 35-40 minutes, stirring and swapping cookie sheets' place every 10 minutes.

Olive Tapenade (great for muffalettas)

Ingredients

1 c green olives with pimento
1 c pitted kalamata olives
2 tbsp finely diced shallot
1/2 c olive oil
2 tbsp finely chopped celery
2 tsp minced garlic
Freshly ground black pepper to taste

Instructions
Finely chop the olives with a knife or in a food processor. Mix all ingredients together.
