Green Curried Zucchini with Spinach

Ingredients

1 med zucchini, cubed into large 1x1 inch blocks
1 small squash, cubed
1/2 cup onion, chopped
three good handfuls fresh spinach
~2 tbsp milk (use coconut if you have it, but regular milk will work)
4 tsp green curry powder
salt
pepper
garlic powder
pinch basil flakes

Instructions

Saute onion, add zucchini and squash and cook for a few minutes (you want the squash and zucchini to be softened). Add two tsp green curry powder, other spices, a little water and the spinach. Cook until spinach wilts. If necessary remove excess water. Add remaining curry powder, milk and any extra spice to taste while gently simmering.

Serve over brown rice, sprinkle with paprika for an extra touch.

Note: if your green curry powder is mild you can add some cayenne.
