Farah's Falafel Wrap
My Persian neighbor Farah and I used to make dinner together from whatever we had in our fridges. Her impeccable sense of style most certainly extended to the table -- she can serve up even the simplest of meals and make you feel like the most honored guest in the entire world. Or at least in Old East Dallas.
Ingredients
Falafel (I like the baked preparation from the Casbah mix)
Baby Arugula
Sliced Tomato
Pita
Amy's Goddess Dressing
Instructions
Fill the pita up! The Goddess dressing is a great substitute when you lack tahini, hummus, tzatziki, etc. Farah is an expert at frying falafel, but I always end up with a sodden mess.
I also add srirach and kosher dill when I have them on hand. I'd like to reconfigure this with Lavash bread to mimic the falafel wraps I used to get for £3 in Camden Town, London.
