Chickpea Salad

 Ingredients

2 cans chickpeas, drained and rinsed

1 whole medium red onion, finely diced and mellowed in lime juice for 10 minutes

2 bell peppers (preferably red and yellow)

1 medium carrot, shaved with a vegetable peeler

1/2 c pitted kalamata olives, sliced

1/2 cup parmesan cheese, grated (optional)

1 avocado, cubed and tossed in lime juice to preserve color

1 large tomato, diced (or a cup a cherry tomatoes quartered)

1/2 to 1 cup italian dressing, to taste

salt & pepper to taste


Instructions

Mix together. Enjoy.
