Vegan Chocolate Chocolate Chip Muffins
Ingredients:
1 c plant milk
1 tsp apple cider vinegar
1 3/4 C all purpose flour
1/4 C cocoa powder
2 1/2 tsp baking powder
1/4 tsp baking soda
1 tsp Penzeys pie spice*
1/2 tsp salt
3/4 C sugar
1/4 C plus 2 Tbsp canola oil
2 tsp vanilla extract
3/4 C chocolate chips
Instructions:
Preheat oven to 375. Whisk together the milk and vinegar, set aside. Sift together the flour, cocoa powder, baking powder, baking soda, salt, and pie spice in a bowl. Whisk the sugar, oil, and vanilla extract into the plant milk. Pour the wet ingredients into the dry ones, and mix until smooth (don't over mix). Fold in the chocolate chips. Fill muffin cups 2/3 of the way, and bake for 20-25 minutes
*Penzeys pie spice is a mix of cinnamon, vanilla sugar, mace, ginger, nutmeg, anise seed, and clove. This can be substituted with cinnamon.
