Vegan Pancakes
1 tablespoon ground flax/chia seed
3 tablespoons water
1 cup flour (I used a mix of AP and spelt)
3/4 cup almond milk
2 tablespoons oil (canola works fine)
1 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon lemon juice
