Vegan Pancakes

  • 1 tablespoon ground flax/chia seed
  • 3 tablespoons water
  • 1 cup flour (I used a mix of AP and spelt)
  • 3/4 cup almond milk
  • 2 tablespoons oil (canola works fine)
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
