Skip Dessert Mashed Potatoes
Ingredients
1 sm container heavy cream
2 tsp salted butter
1 tsp olive oil
2 medium idaho potatoes, cut into ~1 inch cubes (skins on or off, your choice)
2 tsp minced garlic
seasonings (s&p, thyme, onion powder, garlic powder, cumin)
Instructions
Combine ingredients in a medium saucepan and simmer over medium low heat for 20 minutes, or until tender. Place a colander in a bowl and pour the mixture in. Return potatoes to the pan and smash with a fork, folding in the cream as needed. Adjust seasonings to taste.
