One Rise Sourdough
Ingredients
2 1/3 C sourdough starter
3 1/3 C all-purpose flour
1 to 1 1/2 C water
1 scant TBSP salt
Instructions
A couple of days before you plan to bake the bread, pull the starter out of the fridge. Feed it every 8-10 hours until it's been fed 3 times and is super active. Follow the instructions in the first link regarding how to mix the ingredients; I used a countertop mixer to incorporate the starter, flour, and water, and let it sit in the bowl, covered for three hours. I then added the salt and gently kneaded with a dough hook for 10 minutes. I put the dough in a buttered loaf pan to proof. It took about 20 hours to proof, but this process could take 4 - 24 hours. Once the dough has risen, Preheat oven to 400 and bake for 30 minutes. At minute 25 brush the top with olive oil if you want the top to brown. I actually reduced the ingredient amounts to make a small single loaf; next go round we plan to use the full amount and make two artisan loaves.
