Cinnamon Tomato Sauce

Ingredients

1 tbsp olive oil
1/2 tsp salt
1 large yellow onion, diced
1 tbsp chopped garlic
1 tsp ground cinnamon
1/8 tsp ground cloves
1/2 c red wine
1 28 oz can diced pureed tomatoes
2 c water
1/2 c chopped fresh parsley
1 tbsp chopped fresh oregano

Instructions

Saute the onion, garlic, and spices in the oil. Add the wine to deglaze the pan and cook 2-3 minutes, until most has evaporated. Add the tomatoes, water, parsley, and oregano. Lower the heat and simmer gently for 30 minutes. Puree in a food processor and serve.
