Curried Pumpkin Soup

Ingredients

butter
1 clove garlic
1 tsp curry powder
1/4 tsp coriander
1/4 tsp salt
1/8 tsp crushed red pepper
3 c vegetable broth
1 can pumpkin
1 c half and half


Instructions

Chop the garlic and saute in butter. Add the seasonings and broth; simmer for 20 minutes. Add the pumpkin and half and half and simmer 5 more minutes. Puree in a blender until smooth. Serve hot.
