Roasted Cauliflower with Grape Tomatoes

Ingredients:

1 head cauliflower, chopped into florets
1/2 c grape tomatoes, halved
3 cloves of garlic, thinly sliced
Salt
Pepper
Olive Oil
Balti Seasoning
1 half lemon
2 cookie sheets

Instructions:

Place two oven racks in the two top positions. Preheat oven to 475. Toss the cauliflower and tomatoes in a bowl with s&p, Balti Seasoning, and olive oil. Bake for 10 minutes, add the garlic, stir/shake, and cook an additional 10 minutes, until the cauliflower is starting to brown in places.

Serve with a squeeze of lemon and a garnish of chopped basil or flat-leaf parsley.
